You are at no risk if you change jobs after 180 days. The AC-21 rule allows you to do that. Your AOS (485) will not be affected by you changing jobs as the sponsoring company cannot cancel or withdraw the petition once 180 days have elapsed.

Go ahead dude and do it.. There will be no problem, I did it as I was in a kind of similar situation earlier..
Whether to inform INS or not to is your decision entirely, I did not. And my advice is don't inform right now, inform only if they send a RFE. As someone said in another thread "Don't ask, don't tell" is the golden rule.

make sure you get the copies of all the paperwork from the current company - labor, 140, 485 application etc. these will be helpful in case of an RFE. also to get your original 485 notice. also that your new job is in very similar job description and by and large in the same salary range.
