Affidavit of Support question - does the USCIS does a background check on sponsors?

Hi all,
I was wondering if the USCIS carries out background checks on sponsors and co-sponsors based on their Social Security #s in regards to the legiticimacy of their occupations, wages etc.

If the main sponsor has a part-time job (in which the salary is on hourly basis and paid in cash w/o paystubs and the annual salary is too low for filing tax) and also is a small business owner, but in the Affidavit of Support only the income from the part-time job was included (with a letter from the employer verifying the projected income for this fiscal year, date of start, nature of job etc.) and no mention of the small business was made. The small business (it has no other employees other than the employer) was not included because it made too little $$$.

Would the USCIS use the SS# of the sponsor to check their occupations/income agains the IRS database? Isn't it the sponsor's prerogative to include the income he/she deems appropriate in the affidavit? Also, the intending immigrant's annual salary alone is more than the 125% poverty line and all the W-2s, tax returns and pay stubs were sent along the affidavit.
