INS says u "should" (and not "must") inform them.. Lawyers have varying opinions on when to inform - right after changing jobs or only on receiving RFE..
My personal opinion is wait for approval.
You may get approval without any RFE.
If BCIS asks for employment letter and if your original employer is willing to give employment letter you may submit one.
If BCIS asks for employment letter and if your original employer is NOT willing to give employment letter or If BCIS asks for employment letter and pay stubs then you need to go for AC21.
