I have a question on AC21. I left the sponsoring employer (worked for them for 6 years) 4.5 months before getting my GC. I stayed with my new employer for 5 months after getting the GC

I did not file AC21 with USCIS as my attorney at that time told me that it was not a requirement. Is there a problem in this scenario or has anyone been hassled about it during citizenship interview. Obviously if they are not asking the applicant to bring pay stubs etc to the interview is it all left to the applicant's convincing skills??

No issues at all. NO impact if you were AC21 worker or laid off or terminated worker.
 
You are not required to proactively send AC21 documentation to USCIS. AC21 gives you a clear right to change jobs after 180 days of pending I-485. As long as you waited the 180 days they can't do anything to you about that (and even if you left in less than 180 days you are probably still OK as long as the employer didn't revoke the I-140). But one possible issue is leaving the next employer in less than 6 months post-GC. But so far the only people we know about who have been hassled about changing jobs too soon post-GC were those who left in a month or less, and they ultimately got approved although they had to defend themselves with various reasons and/or had the interviewer consult the supervisor.

You may be asked about your employment situation in the interview because they won't see the original sponsoring employer in your 5-year employment history. If asked, just explain your situation with AC21 etc. and working for the sponsor for 6 years and you should be OK. Unless a court ruling is made in the near future that deems 5 months post-GC to be too soon.
