Ac21:Your opinion on whether it is safe to change jobs

I-140 approved, I-485> 180 days.
Currently in my organization I also have H1B 7th year. I have EAD, but not using it.
Got very good new job offer to make more money as a senior systems engineer, company is willing to issue Ac21 letter stating job requires similar duties. The only thing different is that my original E750 requires "BSEE or BSCS" degree, this new job requires "BSCS". I have BSEE and got the job though.

New potential employer does not sponsor H1b, I would need to switch using AC21 EAD.

How risky is this move ? I confess I am concerned because I dont want to see my I-485 process getting hurt at all.
 
You better read other posts regarding this, you will get all your answers.
On the face of it you look pretty okay to invoke your AC21. AC21 mainly looks at your new position and tries to match it to the original position mentioned on the Labor petition or I-140. As long as there is a reasonable match you should be okay.
