If I140 is approved and 180 days have passed after filing I485 then AC21 can be used. Right?

Questions:

1. Can somebody eligible for AC21 take a break for couple of months between switching jobs?
2. Is continuity between jobs essential?
3. If there is a gap of couple of months, will it affect I485 approval?

2. no, but has to be consisitant. must be the same type of job
3. it won't affect. sometimes ins will issue a letter request evidence of employment. since there is 3 month for you to response, people can even find a job with that period of time.

Only thing while using AC21 is that there are more chances of getting an RFE at the time Adjudicating the I-485 application about the Proof of employment.
