AC21 filing procedure

I already read the sticky about what and how to file. But I got a question about when to file.

I already had a job offer but due to the AC21 situation, I will need to wait until 12/5 (that pass 180 days). Can I start working on my 181 days and follow up filing the paperwork later on?
