Guys
I have EAD and have completed 6 months of filing I485. Could I work in "indepenedent contracting" positions? What are the AC21 issues I will have to be aware of , if I go for such employment?

Thanks in advance.

You definitely need a permanent full time position for a GC. You always have (for any GC that requires showing of employment) and this has not changed with AC21.

There may be a possibility of forming your own corporation and having that corporatiion hire you on a permanent full time basis. That may or may not be permissible under AC21. Without implementing regulations (it's been more than two years now) it is not possible to accurately state where AC21 portability would end in this type of situation. All I can say for sure is that if you try it and INS feels that AC21 does not apply (the lack of regulations gives them considerable discretion in both directions) your GC would be denied. My suggestion would be not use the self employment route until a year or so after you receive your GC if at all possible,
