To be precise, GC and AC21 are future employment commitment. Not you stay unemployed until to get GC. You have to be employed at the time of I-485 approval. Otherwise, GC is invalid.

GC Tortoise:There are many posts in the forum where people have filed GC for future employment from one company when they are working for another company.Which means that they need not be employed for the sponsoring company till GC is approved.
I think in ead_port 's case his employer has filed for his GC and he wants to leave his sponsoring employer by invoking AC-21. All what he asks is whether he should actually start working for someother company using AC-21 or its enough if he has a similar job offer from another company that he can join after GC approval.

It is better to provide the letter from the company you are working. Otherwise it will be suspicious in case of an interview. One of my friends had similar issue and asked Sheela Murthy. Her opinion was although you need not have to join, most adjudicators expect you to join the perspective employer once you get the EAD.
