7th year H1B stamping; need Help/advise

Background info

7th year H1 expires in Jan

I-140 approved (substitution labor) thru company XYZ Corp
I-485 filed
Priority date Dec 10, 2004
EB2
MS from a US university
Never worked for Company XYZ Corp

I have been working with Company B for last 7 years.
I got the 7th year extension based on the I-140 filed by Company XYZ Corp
NO GC process with Company B

I want to go to India for a vacation. I have explored the option of coming
back on Advance Parole. But my friends have warned me that officer at port of entry might create problems as I do not work and never have worked with Company XZY Corp. So now I am planning to go to Canada for H1-B stamping. Will it be a problem since GC is being done by Company XYZ whom I have never worked? Please remember that I got 7th year extension on Company B only because of I-140 filed by Company XYZ. I am concerned that Visa officer may grill me on this and ask me why I am not going to Company XYZ and still with Company B.

Please advise. Also which Canadian consulate is best in this situation?

All US Consulates are equaly likely - the consulates in the home country is the safer bet (in terms of educational evaluation). By the way, a GC is for future employment - go with the advice fo the employer XYZ's lawyer.
