I was asked to provide more evidence about my education and experience. I provided true copies of certificates.

Also for experience, I digged my joining letters(the company is not a US company), my promotion letter - practically all the letters that I could get my hand on.

I think that did the trick.

EAD renewals are taking awful long time to get processed, plan about
4-5 months ahead.

EAD is taking that long? My lawyer told me that I should apply for renewal about 3 months prior to expiry. Anyway, thanks for the update. I will apply this week.

- Unfortunately yes if you want to avoid problems with your
employer. A common trend is RFE for government issued
paper identification which adds an extra month. good luck!
