She can get her SSN without fearing loosing her H4 status.
She will loose her H4 status when she starts using her EAD or when you loose your H1 status (if you start using you EAD, if you 485 gets approuved...)

The "plastic card" is not important, legaly speaking you become a US permanent resident (i.e. immigrant) the day your I-485 get approuved (the date that will be printed on your I-485 approuval receipt).

Yes, you can fill your wife I-485 at anytime BEFORE your I-485 gets approuved. If your I-485 get approuved before you have time to fill your wife paperwork, you will need to use the "follow to join" process (it\'s a consular process).
