My advice would be to change your plans, not your interview. Although some people have had luck rescheduling interviews, some others have had their AOS denied because they didn't show up to the interview that they rescheduled. Not worth the risk IMHO.

No AP won't slow down your AOS. I guess getting AP as a back up for H-1B is an OK idea, I don't think you'll have any issue getting an H-1B stamp. If you do go to India and get your H-1B stamp, make sure you use the H-1B stamp and not the AP to re-enter the USA.
Why not just get the H-1B stamp when you are back in India? Then return on the H-1B and file for AOS. You're much better off legally being here on an H-1B than being paroled into the USA.
