Once your 485 is approved your AP and H1B are invalid. You can go to murthy.com and look in FAQs. I dont know what the exact woridng of the law is, but this is the interpretation of all lawyers.
What you said is true. As soon as you start EAD, you loose H1B. so you will have to work on EAD with your full time employer also. If 140 is approved, I would say go for it, else I would wait till 140 is cleared.

I would suggest that when you enter you use your H1B. as far as I-94 is concerned, when your extension will be approved, you will also get a new extended I-94. So it does not matter.

Dependent category and priority date is decided by the primary applicants category, priority date and country of birth. So if you are say an Indian and your spouse is born in Canada, and you are the primary, even she is affected. If it was the other way around, then it would have been fine.
