I got my GC on December 2006. I gave them my 6 months notice and my last day is Jully 13. My lawyer said 6 months was enough to stay with the employer. BTW I have been with this employer for the past 6 years.
If you are on an H1b visa then you don't need to get a J waiver. All you need is your future employer to continue your H-1 and then you can file for PERM.
If you signed a contract already, then it should be stipulated in the contract. AFAIK there is a hefty fine if you break the contract. If the employer breaks the contract, then you will not be fined and you can just finish the remainder of your J waiver at another place.
That is why I did not go the NIW route. I didn't want to commit for 5 years.

I just got my GC and was thinking about the same. How many times were you asked to show your status as an H-1? Me- never. I keep my GC safe at home with my passport.
