I think you can do whatever you want (legally) but its always good to stay with current employer for another six months although you can do some extra work part time like consulting.
Can you tell me the filling date along with Priority dates and Category for the applications you have filed...
Please be clear, Are youtrying to get priority date based on the Old labor, Have you applied I140 based on that labor??
You can retain PD pnly if you have approved I140 based on that labor.

It is possible to extend h1 if I485 gets denied for technical reason like typo mistake or document missing you can apply MTR/Appeal and can apply for extension.
