I am currently on EAD and advance parole (I-485 pending) and planning to travel to India via Europe. My H1-B has expired. Do I need a transit visa in Europe/UK to change flights.

Most probably yes. Now almost all the countries need you to have airport transit visa if you do not have a valid US visa stamped in your passport on the day you are traveling thru their country/airport.
