I have a question, if my wife and kids leave USA without AP but have 485 pending and my wife received EAD a week ago. What are concequencies if they leave country and can they come back?

If they are on dependent H4 visas, they can re-enter without affecting I-485 processing.

if you are on H1 status then your wife and kids can get H4 visa stamp and can enter on H4 status.(if YOU use EAD then you will not be on H1 status and they will not get H4 visa stamp )
if they have Valid H4 stamp then they can use that H4 visa stamp to enter US.
EAD has nothing to do with entry to US. EAD is for work
your wife cant use AP if AP is approved while she is out of US. AP need to be filed in US when your wife is in US and need to be approved while she is in US.
