Change employers while in J-1 academic training

Is it possible if your sponsor is the IIE? I read on their website that they discourage that, but is it at all doable?

Are you talking about no objection? There are a few cases listed below on this forum of people in situations similar to yours who have been able to do it. They basically needed to write a superb statement of reason. Do you have a link to the website in question?

exactly. most sponsors would allow that provided the new job meets the conditions for academic training. however, the IIE explicit discourages that.
