Can I travel to Canada? H1B(7th yr) EB3 I140 approved. I485 submitted

As far as I know, my I-485 application is sitting on a shelf at the NSC. I sent it in July. My check has not been cashed.

I have H1B extension until July 31, 2008.

Can I travel on my H1B to Canada? Or do I have to stay in the US because my I-485 is 'pending' (which it really isn't because it's sitting on a shelf somewhere).

(My 98 year old grandmother is in failing health and I'd like to see her again before she dies.)

Yes you can visit Canada while your I-485 is pending. However, please read section 2 here.

I am confused about the 'visa stamp'. If I travel home to Canada with my current I94, do I need to get my passport stamped as well to return to the states? Or is my I94 enough? If I do need a stamp, do I get it in Canada or the US?

If you travel to Canada through road (by Car), the officer at the border, won't take your existing I-94. You can use the automatic visa revalidation to re-enter U.S.A. The above is valid provided you return within 30 days and no pending appointment exists (on your behalf) at any U.S. consulate/embassy located in Canada.

If you don't know what a visa stamp is, I assume you're a Canadian citizen. If so, no visa stamp is required and you just need your H-1 approval notice to re-enter the US.
