visa stamping interview in OPT status

Hi, currently I am working in F1 visa in my OPT status. My F1 visa expired on 2008. I have extended my OPT till Dec 2010 under STEM. I want to travel out of US in January 2010. Is it safe to travel in my OPT status, since I have to appear for the visa interview in the consulate for re stamping my F1 visa, before I can re enter to US?

If you are in OPT you must take all the papers to prove that you are taking training or working for some one. Instead you are just sitting at dorm with OPT without proof at the time of interview,
Counsel at your home country many not issue any visa .
