If my new employer file a USCIS I129 petition as change of employer, will my new TN get new validity period of three years or it will have the same expiry date as my current TN?
It will be a fresh period, dependant on how long they ask.
But if you are still working at old job, you should be asking for a new additional sponsor, not change of employer, so you can continue working at Job 1 until you wish to leave.
