Is it possible to reschedule the FP appointment date to a later date if the applicant is out of country or something? Does this prolong 485 processing in any way?

Like Lancer said, I would suggest not to reschedule
finger print appointment and get it done quickly.
After all, it is one of the important steps before
your case is eligible for adjudication.
