Don’t meet the income requirement

I don’t meet the income requirement. And I received a “Request For Evidence” from USCIS. I called the number 800-375-5283, the man told me I needed 6 months of paystubs and my W-2 as evidence.
I start my new career in September (where I’ll be making enough to be over 125% of the poverty line) and I’ll have that as evidence before the deadline (November 9, 2019). Does anyone know if only (about) 1 month of work will be enough to be approved?

Highly unlikely

You should get a joint sponsor. Someone who has an established income source that financially covers their household residents and your fiance. Doesn't have to be a relative, could be any individual who is a USC/LPR.
