It shouldn't matter whether you file your 140 and 485 together or file 140 and 485 after sometime. It is the view of certain people in these forums that during a labor substitution, file your I-140 first and then on obtaining the receipt for 140, then file the remaining applications (485, 131,765).
If I were you, I would file all together as long as the documentation speaks about it. This way, your countdown of 180 days (of your 485 filing) starts from day 1. If you are lucky and get your 140 approval in 6 months, then you are immediately ready to take advantage of AC21 and switch jobs since you would have also crossed 180 days on your 485 filing.
Just my thought.
