affidavits are enough as far as I know Thats what I submitted and also many of my friends whose 485s were approved. I submitted affidavits not only from my parents but also from my uncle. Any relative who knows your family and knows about your birth is sufficient.

No Title It does not matter whether you opt for option 1 or 2. Both are legal. Whatever your future employer is comfortable with. Hopefully INS does not ask for anything but if they ask for letter from employer then you send the letter from new employer. you may need attorney to do that stuff.
