In one interview case I heard of the approval was delayed because the H1 papers where not in the I485 file at the time of the interview. The interview was approved after the applicant provided photocopies.

Note that form I9 has an entry where you can add updated information about your current status. Your company and you are supposed to keep the I9 up-to-date. Incidentally the I9 needs to be updated at least every three years, as per the instructions that come with the form.
