Hey,
I'm going to file for Naturalization as a spouse of a US citizen after three years of residency.
In the document checklist they mention to send tax returns and bank statements. Any idea how many bank statements would be good? I'm wondering if I need to send bank statements for the last three years? What other docs would be good?

You need to send bank statements of the last two months before you submit your application. You may also need to take the most recent two statement with you in the interview date, if there is a long time between when you submit your application and when you are called for interview.
