I have recently applied the remove the condition on my green card and i did not provide a cover letter! I didn't know I needed one until today and of course I submitted last Monday. How important is the cover letter?

It is not a requirement.

Is not a must...they will anyway check your package to verify that you include the necessary documents/evidence. A letter stating that you are removing a condition with your spouse is worthless if you are not including enough/sufficient/necessary evidence and that is way more important.

I would say don't worry about it. As long as you have enough evidence, you'll be prefectly fine.
