Question After GC - How soon the Spouse work?

I am going through a CP and my appointment date is fixed for this month. My question is, how soon after I getting into US and I-551 stamped, my spouse could start working? Is it immediate or should we go through some procedures? Basically, employer is sponsoring GC for me and my spouse is working in India.

If she gets her passport stamped with an I-551 she can work as soon as she sets foot in the states

Technically, the next step for your spouse would be to apply for a Social Security Number. That may take a couple of weeks. Some employers will let you start without a SS Number, but you have to provide it within a certain number of days after starting the job.
