Me and my wife are living in Canada, She has dual citizenship, and been living in Canada since she was 14, my question is: is there anyway to get around the 125% above the U.S. poverty level to be a sponsor, this is hard for her since she has never worked in the USA.

Find a friend/relative to sponsor. Who should be USC or PR.

What does USC or PR mean? i am so confused over this hole process.

there is more to it , then just a poverty level.

in order to be a sponsor, your wife must actually live in the United States, or it’s territory or possession.
She may still be eligible even when living abroad if she can show that yours/her residence in Canada is temporary and that she still have a permanent residence in the United States.

hmm, so if we send in the I130 is there anyway for both of us to move to the USA and work?

It might be better to move here first and then file.
Your wife can come to live here without problems, I don’t know about your status.
Also, since she was 14 when she moved to Canada there might be other obstacles preventing her to file right way. You better consult legal services.
