I would not consider postponing the interview if I were you. The test is easy -just sit with your mom and help her out. Its not easy getting a date once you postpone it .
cafeconleche- I had two trips that needed to be updated (not shown here) . I gave the excel sheet only so that it was handy for reference. You dont have to have EVERY bank statement. A random statement for each year would do just fine.
